Ageing process

Bunch sorted prior to destemming and crushing. 48hr cold settling. 80% of the blend fermented and in new French oak barrels. 80% barrel aged in new 500L French oak barrels for 9 months giving enhanced complexity and 20% aged in stainless steel. ageing
